White Sauce Pasta Recipe

  • 1 tsp Chilli flakes
  • Salt (to taste)
  • Veggies of your choice (I used onion, capsicum, corn, and red bell pepper)
  • Spiral pasta or any other type of pasta

White Sauce Recipe:

  1. In a pan, add butter and let it melt. Once melted, add maida (refined wheat flour) and cook for a minute until it turns slightly golden.
  2. Turn the heat to low and add milk slowly, stirring constantly to avoid any lumps. (Tip: Don’t add all the milk at once. This step ensures a smooth white sauce.)
  3. Cook the sauce on medium heat, then add grated cheese along with oregano and chilli flakes. Stir until the sauce thickens to the desired consistency (you can test by checking if the spatula is coated with sauce and it doesn’t drip off too easily). If the sauce is too runny, cook for an extra 2-3 minutes.
  4. Once ready, keep the sauce aside.

Cooking the Pasta:

  1. In a wok, bring water to a boil, adding a little oil and salt. Add the pasta and cook it for around 80% of the recommended cooking time. Drain excess water and set the pasta aside.
  2. Chop your veggies into small cubes (e.g., onion, capsicum, corn, and red bell pepper). Toss the veggies in butter with a pinch of salt and seasoning. Sauté them until they are slightly tender.

Bringing It All Together:

  1. In the same pan, add the cooked pasta and white sauce. Give everything a good mix and let it cook for 2-3 more minutes. Your cafe-style white sauce pasta is now ready to be served hot!
  2. Garnish with extra cheese and sprinkle some chilli flakes or oregano on top for added flavor.
